Greetings my earthly humans if you are interested in learning how to make Charlotte Aux Poire at home to save you some money here is what you will need :

• 24 ladyfingers
• 6 pear halves in syrup
• 4 egg yolks
• 120g caster sugar
• 25 ml milk
• 25 cl whole cream
• 4 sheets of gelatine
• 3 tbsp. tablespoons water spirits of pears or cherry brandy

As for the preparation what goes down is to make a Charlotte aux Poire is the following steps :

1 Put the gelatine to soften in a bowl of cold water.
2 In a saucepan, bring the milk to a boil.In a bowl, whisk the egg yolks with the sugar until the mixture whitens. Stir the hot milk, whisking. Pour into the pan.Let thicken over low heat stirring constantly and without boiling. Off the heat, melt the drained gelatine. Let cool.
3 Whip the very cold liquid cream into whipped cream (unsweetened).
4 Drain the pears, reserving 10 cl syrup in a bowl. Scent water brandy or kirsch.Cut the pears into small cubes.Incorporate them and whipped cream cooled but still liquid.
5 Dip the sponge fingers one by one in the alcoholic syrup. Line the bottom and sides of a charlotte mold. Fill it with the preparation. Shoot and refrigerate 6 hours (or overnight). Turn out before serving and possibly decorate with red berries.

An extremely simple cake whose powerful flavor of almonds and the subtle hazelnut are fly every time.

  • 150g whole hazelnuts (net weight without the shell) or ground hazelnuts
  • 150 g almonds or almond powder
  • 250 g flour
  • 300 g of butter
  • 250 g of sugar
  • 4 eggs

Cake with hazelnuts and almonds: Step 1
In a bowl, beat the eggs and sugar until bleaching.
2Make melt the butter and let it cool down (to save time, simply did melthalf and add the rest to lower the temperature). Ler pour in the mixture, then add and mix the flour gradually to avoid lumps.

Chop finely hazelnuts and almonds (you can use the ground almonds and hazelnuts, but it is worse because there are no songs). Add them to the batter and mix.

Place a sheet of parchment paper into a mold to choose, then pour the batter.

Sunday’s dessert for today’s is a Home made Tarte aux Pomme (apple pie).  Baked by my uncle who is Ovide Pierre Lite, who is a pastry chef as well as a chocolatier maker.

How to make it should you be interested. The ingredients you will need are the following: 

  • For the pâte brisée (pastry)
  • 175g (6 oz) plain flour
  • pinch salt
  • 125g (4 1/2 oz) butter
  • 1 egg yolk
  • 3 tablespoons cold water
  • For the frangipane
  • 125g (4 1/2 oz) butter, softened
  • 100g (4 oz) caster sugar
  • 1 egg, beaten
  • 1 egg yolk
  • 1 dessertspoon Calvados or Kirsch
  • 2 tablespoons plain flour
  • 100g (4 oz) ground almonds
  • Additional ingredients
  • 3 to 4 ripe dessert apples – peeled, cored, halved and thinly sliced
  • 5 tablespoons apricot jam
