Original from Peru. It's produced in Cuzco. Also known as the incas food. It's a type of corn. Preparing maiz cancha is similar to the process of popping popcorn in a skillet. Unlike popcorn, however, maiz cancha does not burst and turn white. The kernels puff up when fried in oil and turn golden brown and crunchy. Cook maiz cancha at home and enjoy it in place of potato or tortilla chips as a more healthful snack.
